The principle of operation of the steam-water jacket: a hermetically sealed space is created between the double walls of the cooking vessel, which is filled with a coolant - water. The steam generated by heating the coolant gives its heat to the product, that is, it is not the product itself that is heated, but the coolant (water) located in the "steam jacket" of the boiler.
If there is no water in the "steam jacket", the automatic shutdown of heating is triggered.
